HOT MEAL DISTRIBUTION OPTIONS FOR CORRECTIONAL SERVICES.

THIS BRIEF RELATES TO THE FOLLOWING TYPES OF PRISON KITCHENS :
1. Maximum security, small prisons or prisons suited to a plated tray system (type 1).
2. Prisons with dining-halls adjacent to the kitchen complex (type 2).
3. Prisons with remote serveries requiring bulk-feeding (type 3).

DESCRIPTION OF EQUIPMENT.
A. TROLLEYS (for the transport, holding & distribution of hot meals) :
Type A1 – Thermocart trolley, Capacity between 40 and 120 meals.
Specifications
Modular, insulated construction with two doors and designed to accommodate 40 Alcat trays and lids for plated meals or 8 x 150mm.deep Gn inserts and lids for bulk-feeding. (Capacity for bulk-feeding is approximately 120 meals).
Liquid containers for tea/coffee can be accommodated on the top of the trolley if necessary.
Combinations of pans or even combinations of plated meals and bulk-feeding can be accommodated in the Thermocart trolley
This trolley is extremely robust and is ideal for type 1 prisons and smaller type 3 prisons including the new generation type of prisons.
Type A2 – Transport & Serving Trolley

Capacity approximately 100 meals (120 litres). Specifications
This trolley was designed specifically for the New Generation of prisons (NGP) such as Klerksdorp, Nigel, Leeukop & Kimberley.
It was designed in conjunction with Correctional Services Consultants for the transport, holding & serving of hot meals to these prisons, but they are equally suitable for other prisons requiring to serve hot meals at remote locations from the kitchen. Please note that hot meals are served directly out of this trolley, therefore they are electrified using a unique heating element suitable for prison applications.
Most suitable for type 3 prisons.
Type A3 – Bulk-food trolleys
Specifications
Capacity between 400 and 1000 portions depending on product.

150 Litre capacity bulk-food trolleys, electrified or
insulated, designed for serving bulk-type food products such as mielie-meal,
pumpkin, cabbage, soup, gravy etc. in type 1,2 or 3 prisons. They should NOT be used for serving of protein or general vegetable items or food items that can be easily crushed or squashed. Suitable wheels should be considered for this trolley, depending on the surface of the floor and distances from the kitchen to the servery points. Particularly suited to type 2 prisons, they form part of the servery lineup.

Type A4 – Mobile holding & serving cabinet
Specifications Specification
Capacity between 400 to 1000 portions depending on product, or between 100 & 120
complete meals.

This trolley accomodates 8x100mm deep Gn inserts and is
used to hold and serve protein, fish and other products that are easily
squashed. |

Type A5 – 260Litre insulated trolley for bulk-feeding
Capacity 800 portions upwards, depending on product. Specification
These are similar to type A3 trolleys, but larger in capacity.
These trolleys are used primarily in type 2 & 3 prisons for bulk-feeding.
Sensitive or easily squashed products should not be used in these trolleys, unless stainless steel partition trays are inserted to separate the product into smaller batches.
The wheels should be designed to suite the particular requirements of the kitchen.
Type A6 – Pap Trolleys designed to be used with the pap-portioning system

Type A7 – Trolleys to hold empty meal trays, lids & mugs
Capacity 138 Chug mugs & 138 AAC trays or lids.
This trolley is manufactured using stainless steel for the frame supports and racks (alternatively the racks can be manufactured from plasticised mild-steel but this is not recommended), and is designed to accommodate the empty mugs, trays & lids at the loading point of the roller-conveyor or even for the return of these dirty items.
B. MEAL TRAYS, LIDS, MUGS AND SPOONS.

The specified AAC meal trays, lids for these trays &
coffee/tea mugs and spoons are as approved and currently in use by
Correctional Services at Pollsmoor, Pretoria, Johannesburg, Westville
Prisons etc. |

C. ROLLER CONVEYOR PLATING SYSTEM
Roller conveyor plating system, size to suite volume of food
to be served per prison.
Applicable primarily for type 1 prison kitchens.
Peripheral equipment required would be variable, depending on requirements, but
could include :
LIQUID CONTAINERS FOR TEA/COFFEE
QC25 liquid containers capacity 25litres (approximately 120 portions).
